Montage Executive Chef Eric Faivre is honored to partner with acclaimed Willamette Valley vintner Beaux Freres Winery in creating a sumptuous dining experience at The Cliff House overlooking Kapalua’s breathtaking Namalu Bay on Friday, September 3rd from 5:30 – 8:00 pm.  This intimate gathering will begin with a welcome beverage served to guests as they take in the unparalleled views of Molokai and Lanai and the rugged west shore of Maui.  The delectable 5-course wine dinner will follow beginning, at 6:00 pm, each course paired with a wine specially selected by Chef Faivre and winemaker Mike Etzel.  

To open this sumptuous feast taking place at one of Kapalua’s most historic venues, Chef Faivre has selected three unforgettable hors d’oeuvres:  Pickled Kauai Shrimp with Saffron-Fennel and Tomato; Cha Soba Maki with Salmon Confit and “Everything” Crème; and Herb Telera with green “Peamole” and Carrot Salata.  As always, guests can always rest assured that, whenever possible, only the freshest, locally sourced ingredients are used in every dish we prepare for them.

Following the hors d’oeuvres service, our attentive Montage associates will serve the second course, Apple Gelite’- freshly shucked Kusshi Oysters with Celery and Fresh Wasabi.  The delicately flavored oysters will be accompanied by Beaux Freres’ 2018 Willamette Valley Chardonnay, a medium-bodied wine with lemon verbena, apricot blossom, and mineral lime notes.

Next, as the sun dips into the ocean, guests will savor Kula Haven Farms Rainbow Trout served with Summer Truffle and Watercress.  The smooth flavor of the sustainably raised trout will pair beautifully with the wine selection, Beaux Frères 2013 Chardonnay Yamill – Carlton A V A.  While obtaining an average critics score of 92 (Outstanding), this buttery and complex vintage has received stellar reviews.

Also receiving the Wine Spectator’s ranking of “Outstanding” is Beaux Frères’ 2018 Les Belle Soeures Pinot Noir, made from grapes grown on Ribbon Ridge, a hill on the southern side of the Chehalem Mountains in Oregon. This pinot noir’s vibrant violet and raspberry notes are the perfect accompaniment to the fourth course of the evening, Herb Compressed Ni’ihau Lamb with Beurre Rouge and Sourdough Duxelles.

Then, as the stars begin to shine in the night sky and waves crash into the cliff face below, our guests will be treated to the fifth course of this exquisite dining experience, Sweet Land Farm Chevre Soufflé’ with Raisin Noir, Pistachio, and Gouda Fondue.  The tart and tangy chevre, sourced from an Oahu artisan creamery, pairs superbly with the 2019 Willamette Valley Pinot Noir served alongside.  Lively, fresh, vibrant, and playful are just some of the words used to describe the aromas of strawberries, raspberries, and sweet spice in this highly rated pinot noir.  

And finally, to close out the evening of incredible food and wine, dessert will be served.  Chef Eric has created an enticing selection of Mignardises.
